Zesty blood orange salad

What you’ll need
- 2 cups rocket
- 1 cup Moroccan mint
- 1 zucchini
- 1 blood orange
- 3 tbsp olive oil
- Juice of 1 lemon
How to make it
- Slice the zucchini diagonally across its length.
- Heat 1 tbsp of olive oil in a skillet on medium heat.
- Sauté the zucchini until lightly browned.
- For the greens, toss together some fresh rocket, Moroccan mint and grilled zucchini.
- Slice two blood oranges into thin disks.
- Prepare a simple vinaigrette of olive oil, lime juice and sea salt.
- Garnish with lime zest for an extra zing.
