Microgreens, big things come in small packages
Microgreens are tiny plants that are harvested just as their leaves start to grow in about 14-21 days from germination. A lot of people confuse microgreens with sprouts, but sprouts are actually harvested much quicker at 2-7 days from germination and before leaves have developed.
Compared to baby greens, microgreens are much smaller in size. There is a wide variety of microgreens that you can grow, including:
- Broccoli
- Watercress
- Arugula
- Radish
- Radicchio
Research comparing microgreens to baby greens and fully matured greens has shown that microgreens have up to nine times more nutrients. They also contain around 40% more polyphenols and antioxidants. This is because microgreens have crammed all the nutrients of a mature plant into a much smaller package.Virtually anyone can grow microgreens even without access to a garden, which is a great way to get an added nutrition kick and save money at the same time.
